On Friday, February 20, PhD candidate Jaqueline Rodríguez from the group will present her doctoral thesis on lactic acid bacteria, specifically on Oenococcus oeni, entitled: "Evaluation of the use of wine lees to promote Oenococcus oeni and malolactic fermentation".

Her research focuses on the study of oenological microorganisms and on the fundamental role played by Oenococcus oeni in malolactic fermentation, a key process for wine stability and sensory quality. This work evaluates the use of wine lees -that is, the residual yeast particles resulting from autolysis- as a strategy to promote the growth of this bacterium and to optimize malolactic fermentation.
