DESCRIPTION:On Friday\, February 20\, PhD candidate Jaqueline Rodríguez fr
 om the group will present her doctoral thesis on lactic acid bacteria\, sp
 ecifically on Oenococcus oeni\, entitled: &quot\;Evaluation of the use of 
 wine lees to promote Oenococcus oeni and malolactic fermentation&quot\;.\n
 \nHer research focuses on the study of oenological microorganisms and on t
 he fundamental role played by Oenococcus oeni in malolactic fermentation\,
  a key process for wine stability and sensory quality. This work evaluates
  the use of wine lees -that is\, the residual yeast particles resulting fr
 om autolysis- as a strategy to promote the growth of this bacterium and to
  optimize malolactic fermentation.
